Mozzarella Pesto Chicken

  • 1 1/2 lbs boneless chicken breasts, thin sliced
  • 2 ouncesĀ Presto Pesto
  • 1 roma tomato, sliced thin
  • 1/2 ounce shredded parmesan
  • 4 3/4 ounces fresh mozzarella, sliced thin
  • 1/4 tsp garlic powder, divided
  • 1/4 tsp dried parsley
  • 1/4 tsp salt
  • 1/4 tsp ground pepper


  1. Preheat oven to 400F.
  2. Toss chicken breasts and pesto in a sealable plastic storage bag to coat the chicken.
  3. Place chicken in 9X13 baking dish.
  4. Place slices of Roma tomato on top of chicken breasts.
  5. Evenly sprinkle 1/8 tsp garlic powder, salt, and pepper over tomatoes.
  6. Place mozzarella over seasoned tomatoes.
  7. Sprinkle parmesan cheese over mozzarella.
  8. Sprinkle 1/8 tsp garlic powder and parsley over parmesan cheese.
  9. Bake for 35-40 minutes.
